  • 1. In skillet, heat oil over medium heat; cook garlic, onion & mushrooms until liquid is evaporated about 6 minutes. Remove from heat. Stir in turkey, beans, 1 cup each of the cheddar & Monterey Jack cheeses & sour cream.
  • 2. Place 1 tortilla on work surface; spoon about 3/4 cup of the filling along center. Fold bottom edge over filling; fold in sides & roll up. Place in greased 13 x 9 glass baking dish. Repeat with remaining tortillas & filling. Top with salsa; cover with foil.
  • 3. Bake in 375°F oven until knife inserted in center comes out hot, about 35 minutes. Uncover; sprinkle with remaining cheeses. Bake until cheese is melted, about 10 minutes.


Add 1/4 cup of finely chopped pickled or fresh jalapenos to Monterey Jack if you like.
