  • Boil the carcass for at least four hours. Make sure you have enough water in there. Add water as necessary. Try to end up with water to equal the amount of soup you need. For me that's usually 1/2 of a four quart pot. When all that boiling is done, strain the broth to get the chicken parts out.
  • In a frying pan, put some oil across the bottom (olive, or...) and cook onion on medium heat until it is transparent. Add the garlic and simmer until its just getting brown.
  • Add 1/2 tsp. of all the listed spices + some black pepper and salt. Only cook the spices for 30 seconds.
  • Put the nice garlic, oniony, spiced up goodness in the broth. Add a splash of soy sauce. Boil it for 15 or 20 minutes and salt to taste. You now have excellent turkey soup!
