  • Wash and chop onion and green pepper; set aside. In a medium saucepan, cook ground turkey breast in olive oil. When nearly cooked through, add the chopped onion and green pepper; sauté until tender. Add tomatoes, undrained kidney beans, corn, jalapenos, and chili powder; stir to combine.
  • Cover and reduce heat to low and simmer for 20 minutes, stirring occasionally and adding water if necessary to maintain stew consistency. The longer you simmer, the better the flavors blend.
  • Meanwhile, assemble your tossed salad with a variety of washed salad greens and vegetables, and toss with your favorite fat free salad dressing. When chili is done cooking, top chili shredded cheese and sour cream. Serve with whole wheat roll and margarine.
