  • Wash and poke holes in the potatoes. Then lightly cover them with vegetable oil, and wrap them in foil. Preheat, and bake in oven at 400 degrees F. After about 40 minutes, pull the potatoes out, and leave the oven on at 350 degrees F. Unwrap, and let cool for 5-10 minutes.
  • After cooling (the potatoes will still be hot), cut them long ways with a butter knife. Scoop out the middles into a bowl, leaving some potato to keep the skin together. When finished, smash the potatoes up, and add the remainder of the ingredients to your liking into bowl (leaving some cheese for the topping), and mix. Spoon the potato mixture back into the potato boats until the mixture is gone.
  • Line up the potato boats across a cookie sheet or in casserole dish, and then cover with the remainder of the cheese. Bake for 10-15 minutes until cheese is melted. Enjoy!

Special Equipment Needed

This recipe is easy, but can be tricky. Use a butter knife to cut potatoes. Spoon out potatoes with a teaspoon. Don't be afraid to spice it up, or add more ingredients to it. Enjoy!
