  • Preheat oven to 350 degrees and place a cookie sheet on baking rack at the same time. Place iron skillet on burner over medium heat and melt 1/4 cup butter. Add 3/4 cup of sugar stir to dissolve. Add cranberries and stir until cranberries are coated. Set aside.
  • Put flour, salt, cinnamon, pecans, remaining sugar, 1/2 cup of butter cubed and the eggs in a 4 cup food processor. Pulse to combine all ingredients. Slowly add milk through the funnel to make batter into a dropping consistency.
  • Pour batter over berries in the iron skillet and place in oven onto cookie sheet. Bake for 30 minutes or until cake springs back to the touch. Cake should shrink from the sides of skillet. Remove skillet from oven and place a plate over skillet and invert. This could be served warm with fresh whipped cream or peppermint ice cream.
