This is the best meatloaf recipe I have came across so far. My kids love it and always ask for it for our Sunday dinner. I do add onions to mine and also add more barbecue sauce than the recipe calls for on top.
I agree that the recipe as written does not have enough flavor. I have experimented with it a lot and I think I've found the best possible variation. Use the Kraft Thick and Spicy Brown Sugar flavor BBQ sauce instead of the regular BBQ and increase the sauce mixed in to the meatloaf to 1/2 cup. You may need to add a little less water to compensate for the extra liquid to keep it holding together well. I find just over 3/4 cup works best for me. I also don't measure out how much sauce goes over the top of the meatloaf, I just smear it on with a spoon until it's well covered like a thick glaze. My husband loves this meatloaf and begs for it every week. I don't even like meatloaf and I can eat this recipe.
