  • Cook your rice according to the box directions. Cook your chicken breast accordingly (bake at 350 degrees F for approximately 20 minutes or more depending on the thickness of your chicken).
  • Melt your cheese in the microwave until soft not too long and stir. Then open your soup. In a large bowl pour in your rice. Mix in your cream soup (chicken or mushroom); it will mix well because rice will still be warm. Then mix in the Velveeta Cheese, then mix in your frozen vegetables, then mix in chicken breasts, then salt and pepper to taste.
  • Bake in and casserole dish to heat soup and melt cheese more thoroughly another 30 minutes. And if desired take crackers (butter type), and add melted butter (tsp.) and crumble crackers and mix in melted butter and crumble them over the top before you bake. Or grate some sharp Kraft Cheddar Cheese over top. Or if you want you could do both.

This is simple and good and you have complete meal. Maybe, a piece of cooked dinner roll or some kind of lite type of bread would finish this meal. And myself coming from the south a cold class of sweet tea to accompany the meal. Kids like this also and will eat their veggies this way.
