  • Cut the zucchini in match-like sticks. Slice the onion in thin medium sized slices. Cut the tomatoes and green peppers in thin slices as well. Mince the garlic clove
  • Heat the oil in a skillet. Add the oregano, salt and pepper. Add the garlic and cook until light brown. Stir in the onion and cook until translucent. Add the zucchini and stir fry for 10 minutes until tender.
  • Next, add the green pepper and tomatoes and cook for about 5 more minutes until the green pepper is tender but firm. Finally, stir in the vegetables and the Philadelphia cream cheese until melted and cook for 3 more minutes.
  • Ready to serve as a delicious side dish!

* To peel the tomatoes: - Make a cross with a knife in the lower part of the tomatoes. - Plunge them into boiling water for about 5 minutes. - Take them out and plunge them in a bowl of cold water until the skin starts to peel off. - Afterwards, take out the rest of the skin and cut in half to squeeze out the seeds. Proceed to slice them.
