  • Cook your ravioli in boiling water. Then, heat oil in pan. Add zucchini, squash, and carrots. Meanwhile, cook frozen spinach in the microwave for 6 minutes. Once veggies in the pan are soft and tender, add garlic. Then add the spinach. Pour in 1 cup of sauce and heat through.
  • In a 9x9 baking dish, pour some sauce in the bottom. Then build layers of first ravioli, then vegetable mixture, next mozzarella and parmesan cheese. After each cheese layer pour some sauce on top.
  • Bake at 375 degrees F for 25 minutes.

My parents were coming for a visit on Good Friday and I had to come up with a meatless dish. I had, in the past, made this dish using a meat sauce but thought that it would translate well into a vegetarian meal. My husband was skeptical because he doesn't like vegetables but he loved it! And my parents were delightfully surprised by my creativity.
