  • Slice up all the vegetables and saute them in olive oil with garlic cloves, salt and pepper until all the vegetables are cooked through.
  • Transfer to food processor, puree on high speed. Add tomato paste plus one can water per can tomato paste. Return food processor to high speed.
  • Pour mixture into sauce pan over medium low heat. Add sugar and baking soda. Add seasoning as desired. Simmer for minimum of 30 minutes or until ready to serve, stirring regularly.

Notes

I sometimes add 2 tsp. of Italian seasoning but it is not necessary as the vegetables give off a lot of flavor.
