You can substitute cooked chicken breast for the veggies. Cook the chicken breast in boiling water, then cut in into very small pieces. I just separate the chicken meat with my hands. Saute the chicken in oil, garlic, onion. You can add some shredded carrots, green onion and potato for more flavor. Cool it down. Cut the spring roll wrappers into 4 pieces. Put about a tsp. of the mixture in the wrapper and roll. Deep fry. As for the sauce you can use the vinegar dip or just pour some catsup or eat it plain.
