  • Preheat oven to 375°F. In casserole dish add drained black beans and all remaining ingredients except cheese. Stir to mix well.
  • Cover casserole and put into preheated oven. After 1/2 hour stir and recover. In 30 minutes remove from oven and add cheese to top. Place back into oven until cheese is melted. Let stand 5 minutes and serve.
  • Serve with warm tortillas or green salad and bread sticks.

Notes

Even my kids love this and they are definitely meat eaters, but you don't miss it at all in this dish. Great for a pot luck take-along or football get-togethers. Recipe can easily be doubled and you may add sour cream to top along with chopped green onions and tomato. Have fun with it and enjoy!
