  • 1. Cook and drain noodles as directed.
  • 2. Cut broccoli into bite-size pieces.
  • 3. Mix broccoli, carrots, tomatoes and peppers in large bowl.
  • 4. In separate bowl, mix ricotta cheese, parmesan cheese and egg.
  • 5. Preheat oven to 375 degrees
  • 6. Spoon 1/3 cup sauce in bottom of square pan.
  • 7. Layer noodles, cheese mixture, veggies, sauce and mozzarella
  • 8. Repeat layers.
  • 9. Last layer -- use all ingredients except cheese mixture. Make sure sauce completely covers noodles.
  • 10. Bake for 45 minutes to 1 hour.

Notes

**I often split ingredients into two 8" x 8" lasagnas. Before baking, place one in freezer and bake the other! Frozen lasagna keeps well, but is sometimes a little runnier than fresh.
