  • Preheat oven to 350 degrees F. Prepare rice as directed, leaving out seasoning packet and substituting brown sugar. It's ok for it to be a bit watery when done cooking.
  • Dice olives, mushrooms, and onions. In a large sauce pan, combine olives, mushrooms, onions, rice, egg whites, garlic and ground black pepper. Cook mixture over medium heat until egg whites are cooked and water has cooked off, stirring constantly.
  • Cut off pepper tops and clean out seeds. Pour diced tomatoes into bottom of oven safe dish.
  • Stuff peppers with layers of light cheese and mixture, ending with cheese on top. Place upright in dish. Loosely tent with aluminum foil.
  • Bake for 30 minutes.
