  • Add rice in 2 cups boiling water, 1 tsp. butter & seasoning to taste bring to boiling. Turn fire to low, cover & cook until rice is soft.
  • In 2 cups of water, add lentils, 1 tsp. butter, seasoning to taste, onion, chicken or beef seasoning to taste, and cook about 45 minutes or until soft.
  • 1. Place chips on plate.
  • 2. Place cooked hot rice on chips and lentils on rice.
  • 3. Add lettuce, tomatoes, cheese, olives, avocado, sour cream & salsa.

Notes

This is very quick & very good. You can add any other taco ingredients you'd like. The chips are any kind except potato chips or flavored Doritos. It makes more than expected so use your own judgment. You will love this recipe.

    Since the recipe calls for beef or chicken seasoning, I would replace it with vegetable boullion that you can grind into a powder. Add to that some onion and garlic powder to make it more tastier. Other than that, it's a good recipe minus the beef or chicken seasoning.
