  • 1. Saute onion and bell pepper over medium heat until tender.
  • 2. Add taco seasoning and stir.
  • 3. Begin layering casserole as follows:
  • Spread 2 Tablespoons of the enchilada sauce in the bottom of an 8x8 baking dish. Layer 2 of the tortillas (cut one in half and place pieces to make a layer). Cover with a few spoonfuls of enchilada sauce. Add 1/3 of the onion/bell pepper mixture. Sprinkle a layer of grated cheese and drop small spoonfuls of the refried beans over the cheese. Repeat this for 2 more layers.
  • 4. Cover the casserole with the last 2 tortillas and drizzle the rest of the enchilada sauce over them. Cover with grated cheese.
  • 5. Bake in a 350 degree oven for 15-20 minutes--until cheese is melted and casserole is bubbly.


Serve with a salad and tortilla chips. You may garnish with salsa, sour cream and/or guacamole.
