  • 1. Put peppers and squash in a skillet on med-high heat. Spray vegetables with cooking spray and cover. Let cook for 3 minutes stirring occasionally.
  • 2. Meanwhile, crack egg into a small bowl and mix with a fork until the yolk and the white are well mixed. Remove the lid of the skillet, reduce heat to medium, and add the egg. Let cook until egg is semi-solid on the bottom.
  • 3. Stir up the egg with the vegetables until egg is in a scrambled consistency. Season with salt and pepper and enjoy!

** I recommend PAM Butter Flavored cooking spray but you could use oil, butter, or regular cooking spray **For variety, add cheese, onion, or red bell pepper
