  • 1. Mix broccoli, red bell pepper, onion, cheese and tofu.
  • 2. Spread the mixture on one whole wheat tortilla. Cover with the second tortilla.
  • 3. Microwave for 1 minute. Cut into 8 wedges and serve.

Notes

This is one way to get my kid to eat broccoli and he loves this. Optional: Add hot sauce on top of each wedge for some spicy zing. Optional: Add bacon bits if you eat meat for that crunchy taste.
