  • 1. In a med. nonstick skillet, melt the butter. Add breadcrumbs, sugar, and cinnamon. Cook mixture over medium heat, stirring constantly until breadcrumbs are golden brown. Remove from heat and set aside.
  • 2. In a large bowl, whip cream until stiff peaks form, and then set aside.
  • 3. To Assemble: Divide 1/2 applesauce evenly between four glass serving bowls. Sprinkle 1/4 cup breadcrumbs over the applesauce and top with 1/2 of the whipped cream. Repeat with the remaining applesauce, another 1/4 cup of the breadcrumbs and remaining whipped cream. (You can create more than 2 layers, depending on the size of your serving dishes, but always end with a layer of whipped cream.) Reserve the leftover breadcrumbs for another use. Garnish with the chopped hazelnuts and serve immediately.

I got this from a Martha Stewart Living Magazine, Sept. 2003. It was one of the recipes that she used on the show. I have changed it a little with adding some brown sugar with the breadcrumbs and a "shake" of apple pie spice mix. My grandchildren love this for 2 reasons. One they love the taste, and two, they can help make it. I don't normally make it in small bowls but in a large glass bowl where they can see the layers. I have 12 grandkids here after school most days so I make a huge amount and then they put it together, with about 6 layers of applesauce and whipped cream and breadcrumbs. They have experimented with throwing in gummy bears, red hot candies and anything else that they thought was good. The last change was with caramel sauce. They make it so they will eat it, so they love it. I recommend it to all, but especially those with children.
