  • Peel and quarter potatoes, boil until tender, drain and dice-set aside. Chop bacon into small pieces, fry until almost done, place on paper towel, set aside.
  • Take the cheese, broth, and bacon, melt it down (using enough broth to make as soupy as you like).
  • When hot enough add the scallions and potatoes, season to taste.

This is not my recipe but it is great. All measurements are approx. I have made this several times, I like to do my bacon in microwave and drain well to make it crispy. I use more bacon than this calls for. With the broth I wouldn't buy a large can -- better to buy several smaller ones, so you don’t have waste. This can be made and put into a slow cooker on warm. Experimenting is part of the fun of cooking. Enjoy.
