Venison Burger with Tomato and Apple Chutney

  • 1. Put the venison, chives and salt and pepper in a food processor and chop for 15 seconds.
  • 2. Remove and make into 2 patties and leave to rest.
  • 3. Heat the butter in a pan and add the red onion and sugar.
  • 4. Cook for 5 minutes or until the onion is soft.
  • 4. Core and peel the apple and cut into cubes.
  • 5. Add to the onion along with tomatoes, thyme, white wine and white wine vinegar. Simmer gently for 8 minutes.
  • 6. Heat a griddle or frying pan and fry the burgers for 4 to 5 minutes on each side.
  • 7. Toast the bread, drizzle with olive oil and place the burgers on top. Put the chutney on to the burger and garnish with chives.
