  • Mix thoroughly the carrots, sugar, oil, and eggs. Mix separately the dry ingredients - flour, baking powder, soda, salt, cinnamon and nuts. Combine the 2 mixtures and blend well.
  • Bake in a greased tube or bundt pan for 1 1/2 hours at 300°. Allow to cool before inverting. I drizzle a thin icing over top while still warm, letting it run down the sides.
