  • Start by preheating your oven and prepare breadsticks according to package directions.
  • Begin by mincing garlic and chopping up one shallot or onion. Set aside. Open cans and set with onion and garlic till ready to use.
  • Begin by getting a large pot of water to boil your Rigatoni. And start heating that on the stove.
  • Meanwhile, in a large skillet put extra virgin olive oil and garlic into the pan and put on medium high heat. This will allow the garlic to infuse the oil. After garlic starts to sizzle really good, stir in shallots or onions whichever you have till almost translucent (about 5 minutes if that) stirring occasionally.
  • Then add Hunts Diced Tomatoes, Progresso soup and vodka. Stir till mixture is incorporated and it comes to a boil. Turn stove down to medium and simmer for 15 min. till it cooks down, once again stirring occasionally.
  • Meanwhile, salt your pasta water generously, and then add your Rigatoni to the boiling water. Cook till desired, (I prefer mine to be a little more done than al dente`) Drain and leave in a strainer in the sink till sauce is done. (Do not rinse)
  • Now that sauce is cooked down and looking fabulous, add the can of evaporated milk and red pepper flakes. (Put red pepper flakes in your hand and pinch them to allow flavor to come out before putting them into your pan.) Taste your sauce and salt and pepper accordingly. Stir till completely incorporated cook for about 5 minutes. Add pasta to the sauce and stir carefully so that you don't break up the noodles.
  • Pull bread sticks out of the oven when ready.
  • Serve immediately in a gorgeous pasta bowl with a big handful of parmesan cheese and flat leaf parsley over the top with garlic bread sticks on the side and your favorite red wine! Bonne appetite!
