  • 1. First you fill a pot with enough water to cover the red potatoes. You cut up each potato in half to be able to have them cook faster. Season the water with salt and leave on high until boiling. Once you see it boiling lower the heat to low medium. Let them boil for about 5-8 minutes. Once they are done, drain them and place them in the bowl with the rest of the ingredients. This is the last ingredient you put in the bowl.
  • 2. Get a small pot and place water in it until it covers the eggs. Place the four eggs in there and keep the heat on medium high until they are boiling. Once the water is boiling, bring the heat down to medium low and keep it boiling for another 5 minutes. Let the eggs cool and get rid of the shell and place the eggs together with the onions and mix them well.
  • 3. Cut the white onion and the green onion into small pieces. Place them in a food processor to finely dice them. Then place them in a large bowl.
  • 4. Put the 1/2 cup of mayonnaise in the bowl and mix them together. Add the salt, pepper, and seasoning. Mix well.
  • 5. Grab the bacon and cut up in small pieces as well. Get a small sauce pan and place 2 Tbsp. of olive oil. Set the stove to a medium heat until hot.
  • 6. Place the bacon in the pan and let it cook with a cover on top for about 10 minutes. Keep on checking on the bacon. Here you can keep it cooking as long as you want. It depends on how crispy you want the bacon.
  • 7. Then add the bacon to the mixture and mix them.
  • 8. Once you have finished up all the ingredients, place the potatoes into the bowl and mix well. Do not refrigerate after cooking because this is a warm potato salad.

Special Equipment Needed


**Remember when putting all the ingredients together, the potatoes will seem as though they are mashing but that is fine. It makes the salad a whole lot better. **This is a great idea for a Summer BBQ at home with Ribs and burgers. **You can add your favorite type of cold cuts as well such as ham,salami, or even mortadella.
