  • 1. Preheat oven to 375 degrees F.
  • 2. Boil chicken breasts until cooked through. Cube into bite size pieces, set aside.
  • 3. Meanwhile, cook broccoli as package indicates (or steam fresh broccoli florets).
  • 4. Combine mayonnaise and soup, blend well. Add curry until mixed well.
  • 5. Place broccoli in bottom of 13x9 baking dish. Top with cubed chicken then soup mix. Sprinkle with bread crumbs.
  • 6. Bake for 25-30 minute or until heated through
  • 7. Sprinkle with cheese and serve over 1/2 cup rice.


For extra flavor when boiling the chicken add two celery stalks, two carrots & 1/2 onion - all cut in large pieces to the water. To cut calories/fat use reduced fat/fat free mayo and soup.
