  • Preheat oven 350°F. Crush cookies. Melt butter and mix into cookies. Press into a springform pan.
  • Melt chocolate in double boiler. Combine cream cheese and chocolate in mixer. Spread 100% fruit red raspberry onto crust to cover (reserve the remainder for top). Pour cream cheese mixture into crust. Spoon remainder of raspberry onto top and swirl.
  • Bake about 25-30 minutes. You will know it is done when center is almost set. Remove from oven and allow to cool and refrigerate in pan. Remove from fridge and cut nice clean pieces.

Special Equipment Needed


Serve with milk it is very rich. Use a sharp knife for nice clean cuts crust is hard when it's cold. I use a meat cleaver to cut it.
