  • 1. Measure flour, wheat germ, baking soda and salt into large bowl. Stir to blend.
  • 2. In bowl of food processor, combine the eggs, banana, honey, vegetable oil, lemon juice and vanilla until well blended.
  • 3. Pour over flour mixture. Add walnuts.
  • 4. Stir with rubber spatula just until blended
  • 5. Pour into a greased and floured 8x5x3-inch loaf pan.
  • 6. Bake at 350 degree F until sides pull away from pan and pick inserted in center comes out clean, 45 to 55 minutes.
  • 7. Cool on rack before removing from pan.

Notes

For a less dense loaf of bread, substitute 1 cup of white flour for 1 cup of the whole wheat flour.
