  • Cook wild rice according to package directions. While rice is cooking, fry bacon until crisp in skillet, remove, cool, crumble and set aside. To bacon drippings, add the celery and onion, cook until tender.
  • In a crock-pot or large stock pot, add the half-and-half and soups; mix well. Cook on low heat for 30 minutes.
  • Add bacon, sautéed onions and celery, wine, and wild rice. Simmer for 30 minutes more until the flavors have mingled, then add cheese. Serve.

Special Equipment Needed


Wild rice takes longer to cook than other rice. For this dish, the wild rice should be cooked until the kernels burst open. Important to taste test – rice should not be crunchy. Cook longer, if needed before adding to soup mixture. Serve with your favorite crusty old world bread. I serve a Rosemary bread.
