  • Preheat oven at 350 degrees F. Brown meat and drain. Sauté onion. Add all ingredients together in a saucepan (except the tortillas and cheese.)
  • Cut the tortillas in quarters. In a 9x9-inch casserole dish, place a layer of sauce in bottom, then add a layer of corn tortillas, then a layer of cheese. Continue layering. End with cheese on top.
  • Bake uncovered for 35 – 40 minutes.

Wildfire was given to us by a friend and has been in my family for many years. We have adopted this as our “go to” recipe because it is easy to follow and doesn’t require a lot of planning. I love that it is so versatile! For instance, I usually leave out onions and it still tastes great! You can make it your own. Also, Wildfire may be prepared, frozen, and then baked at a later time. This Mexican dish is always a favorite. When serving, corn-on-the-cob as a side dish, you can’t go wrong.
