  • Preheat oven to 350. Mix all ingredients EXCEPT confectioners' sugar and milk) well and pour into 2 greased and floured 8" loaf pans.
  • Bake at 350°F for 45 minutes or until done. Cool 5-10 minutes in pan; then remove to wire rack.
  • Mix about 1 cup confectioners’ sugar with enough milk to make a smooth paste. Brush on top and sides of cake while warm.

Special Equipment Needed

Variety: Instead of milk, try mixing maraschino cherry juice, lemon juice, Kahlua, etc., with the confectioners' sugar for the paste. You can also take a can of ready-to-spread vanilla or cream cheese icing, add confectioners' sugar to it (by the teaspoon until it gets to the consistency you want), mix well, and spread over the top of the cake for an icing that will 'set up similar to royal icing' so it can be wrapped for a gift. The alcohol bakes out, so it is a nice "breakfast loaf" for those who don't drink and may shy away because of its name. This has a very moist cake-like consistency and is wonderful with anything from milk to coffee, tea, hot chocolate, or just by itself!
