  • Scrub potatoes and cut each into approx. six chunks to boil (The smaller the pieces the faster they cook). Leave skins on! Yukon Gold's have such a thin skin that it's easily mashed up and it adds a great flavor to the dish.
  • Boil the potatoes until fully cooked, and then drain. Add the sour cream (I prefer the sour cream over using milk - It makes the mashed potatoes creamier and gives them a zesty bite).
  • Add the butter, chives, and garlic salt. Beat/whip until light and fluffy. Add salt and pepper to taste.


Mix it up: There are many variations to this recipe i.e. substitute the chives and/or garlic with cooked bacon cut into small bits, add your favorite type of cheese (Pepper jack gives it a spicy kick) You can also make different toppings and gravies for the dish i.e. meat gravy, chili and cheese, etc.
