  • Preheat oven to 325 degrees F (165 degrees C). Spray a 9x5 inch loaf pan with non-stick cooking spray. Sprinkle 2 teaspoons sugar in pan and shake to coat bottom.
  • In a large bowl, blend together the eggs, oil, buttermilk, bananas, and vanilla extract. In a separate bowl, mix together the sugars, flour, baking soda & salt until well combined with no lumps. Slowly add the dry ingredients to the banana mixture and stir until well blended. Stir in chocolate chips or pecans.
  • Pour into prepared loaf pan and bake for 1 hour and 15 minutes or until a cake tester inserted in the center comes out clean.

Special Equipment Needed


For a low-fat version, substitute half the oil with unsweetened applesauce (i.e., 1/4 cup applesauce and 1/4 cup vegetable oil).
