  • Peel butternut squash and remove seeds. (Boiling the squash a few minutes before peeling makes it easier to peel). Cut into small cubes, and boil in slightly salted water until tender. Drain and mash. Add margarine, brown sugar, spices and vanilla. Mix all together and put in a slightly buttered 9x13 inch baking dish.
  • Topping: Mix 1/2 cup chopped pecans, 1/2 cup brown sugar, 2 Tbsp margarine, and sprinkle over squash mixture.
  • Bake at 350 degrees F for 30 minutes or until top is brown.

Notes

This tastes like Sweet Potato Pie without the crust.
