  • HEAT large non-stick skillet to medium heat. Add olive oil to pan. Mix bread crumbs and parmesan cheese into a bowl. Lightly coat each chicken breast with mixture and place into skillet. Cook chicken until both sides are browned and chicken is cooked through.
  • HEAT in a saucepan (at least 3 qt.) on medium-high heat: Alfredo sauce, Italian seasoning, and vegetables. Bring to boil. When sauce begins to boil, lower heat to a simmer. Simmer about 10 min. or until vegetables are tender. Be sure to stir often so sauce doesn't stick or burn.
  • CUT cooked breaded chicken into chunks. Add cut chicken to Alfredo sauce & vegetables. Sprinkle with fresh parmesan for a garnish and serve!


You shouldn't have too much extra Alfredo sauce. There should be just enough to coat the chicken and vegetables. I usually serve this meal with a side salad of fresh mixed greens with a light Italian dressing. You wind up having a light meal with lots of vegetables.. very tasty and very good for you! Options: 1) You can use frozen vegetables but I prefer mine fresh. 2) You can leave the chicken breasts whole and top them with the sauce/vegetables. If kids are involved, it's easier if the chicken is already cut and mixed into the sauce.
