  • Peel and cube potatoes. Place in a large pot of water with salt to taste. Bring to a boil and cook until tender. Set aside.
  • In a separate pot, melt butter over medium heat, being careful not to brown the butter. Grate onion and carrot, and add to butter mixture. Saute until tender.
  • Sprinkle flour over mixture and cook for aproximately 3 minutes, until flour is cooked. Stir in chicken stock, thyme and basil. Cook over medium heat until it comes to a boil.
  • Slowly pour in heavy cream. Stir occassionally to avoid lumps. Cook over medium heat for aproximately 15 minutes.
  • Strain cooked potatoes. Divide potatoes into 2 equal parts. Mash one half. Slowly add into cream mixture until well dissolved. Add remaining half of cubed potatoes.
  • Cook over slow heat for 10 minutes, until thickened and creamy. Serve in individual soup bowls. Garnish with shredded cheddar cheese.
