  • In a medium saucepan, combine butter, salt, sugar and water over medium heat. Bring to a boil. Remove from heat and stir in flour. Return to heat and stir continuously until mixture forms a ball. Transfer mixture to bowl. Add vanilla. Stir in eggs 1 at a time, mixing each one in completely before adding the next one. Mix until smooth. The dough may be refrigerated until later if desired.
  • Pour enough oil into a large pan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer reads 375 degrees F. Using two teaspoons scoop up the dough and form it around one berry or chunk of fruit. Try to be sure that the whole fruit is covered. Drop the dumpling in the hot oil, frying in small batches. Turn the zeppole once or twice, cooking until golden and puffed up, roughly five minutes. Drain on paper towels.
  • While the zeppole cools, add about a tablespoon of milk to the chocolate chips in a microwave safe bowl. Microwave in short bursts, no more than 30 seconds, adding more milk as needed until the chocolate drips easily (but not too fluidly) from the spoon. Arrange zeppole on serving plate. Drizzle with chocolate mixture and dust lightly with powdered sugar. Serve immediately.

Special Equipment Needed


Can be made in half and quarter batches. Half batch: sugar is 1 Tbsp, 1 tsp, salt is 1/8 tsp (or a "dash"). Quarter Batch: sugar is 2 1/4 tsp, salt is a pinch. All other ingredients can be divided evenly.
