  • Slice the vegetables and steam in as little water as possible, reserve water. When the vegetables are halfway done, place them in a mixing bowl. Add the rest of the ingredients (except the stuffing).
  • Follow the directions on the stuffing box adding the proper amount of water. Mix all together. Place the mixture in a casserole dish, cover.
  • Bake at 350 degrees F for 45 minutes. Uncover and let it brown for 15. It's ready to eat! Enjoy!


My family has me make this for all our holiday get-togethers. It's colorful and best of all, my kids love it and they're getting their veggies! You can also place all ingredients in a crock-pot/slow cooker in the morning and it will be ready when you are ready for dinner. Cook on low all day, no need to stir. This is the way I cook it most because I can bring it to my family's house and plug it in, leave it on warm until dinner is ready. Enjoy, Cindi

    I divided it into several smaller portions and froze them for later. It's a great way to take advantage of home grown veggies when they're in abundance.
