My family has me make this for all our holiday get-togethers. It's colorful and best of all, my kids love it and they're getting their veggies!
You can also place all ingredients in a crock-pot/slow cooker in the morning and it will be ready when you are ready for dinner. Cook on low all day, no need to stir. This is the way I cook it most because I can bring it to my family's house and plug it in, leave it on warm until dinner is ready.

I divided it into several smaller portions and froze them for later. It's a great way to take advantage of home grown veggies when they're in abundance.
