  • Mix flour, baking powder, baking soda, salt and cocoa powder and set aside. Beat eggs, sugar, vanilla extract and oil. Add zucchini and nuts. Next mix in dry ingredients.
  • Spread evenly in a greased and floured cake pan.
  • Bake @ 350 degrees for approx. 45 minutes.
  • Insert a toothpick and if it comes out clean it is done.


Frost with your favorite frosting. This is a very moist cake; it is good plain or with a scoop of ice cream too. You can also make cupcakes out of these too; bake 25 minutes - depending on size.

    We LOVED this "cake". It is more like a brownie. My picky eater wasn't going to try it because it had zucchini in it. He did and he had 2 pieces!! He was amazed that he couldn't even tell there was any zucchini!!!

    This is really yummy and almost like a brownie. I've made it twice in the last week and my family loves it! The recipe makes too much for a 9x13 pan. I used a 9x13 and an 8x8 pan because if you put it all in one it's too thick and takes longer to cook and gets dry. Also I sprinkled chocolate chips all over the top before baking (cause thats what my mom always did) and it comes out like a built in icing. awesome!

    It is easy to make and every one that I have served it to like it very much. I have made this cake for employees that my husband worked with and the cake pan always came back empty.
