  • Crust:
  • Mix all ingredients together until crumbly. Pat 1/2 of the crumb mixture into a 13x9 inch pan. Bake at 350°F for 10 minutes.
  • Filling:
  • Simmer zucchini in lemon juice until tender. Add sugar, nutmeg and cinnamon. Simmer 5 minutes, then add 1/2 cup crumb mixture to thicken filling. Set aside.
  • Pour filling into pre-baked crust. Top with remaining crumb mixture (top should look crumbly). Bake at 350°F for 30-40 minutes.

Notes

This recipe came from my cookbook from the school. Kelly submitted the recipe. It tastes just like apple pie. Even my son, who hates zucchini, loves it!
