  • Heat oven to 375°F.
  • Press potatoes onto bottom and up side of 9-inch pie plate sprayed with cooking spray. Top with 1/2 cup cheese, mushrooms and broccoli.
  • Whisk eggs, milk and seasonings until blended; pour over ingredients in pie plate. Sprinkle with remaining cheese.
  • Bake 35 min. or until center is set and top is golden brown.

Creative Leftovers

This is great reheated the next day. Microwave each slice on HIGH 1 to 2 min. or until heated through. Serve for lunch with a side salad.

Rated 4 out of 5 by from Overall, this is an excellent recipe that just needs a few adjustments. Overall, this is an excellent recipe that just needs a few adjustments. I thought that the hashbrowns would be a little bland since its just potatoes and parmesan. So I fried up the 2 cups of potatoes and generously added lowry's salt, olive oil, (little bit of) butter, pepper and garlic to them. I also used fresh white button mushrooms instead of the jarred ones. My only complaint was the hashbrowns were a little dry. Next time i plan to add something to add a little moisture to them. I also plan to add a thin layer of mozzarella on top of the parmesan too.

Rated 4 out of 5 by from This was quick and easy. This was quick and easy. I substituted Cheddar cheese for the mozzarella because it was what I had in the fridge. I didn't have shredded potato so I used Ore Ida cubed hashbrowith with peppers and onions and it added a nice flavor. I added extra cheese on the potato, broccoli, mushroom then poured on the egg mixture. I made it with 7 eggs to feed a few extra people. I also sprinkled on adobo seasoning and it was just delicious.

On top of that add sausage (any kind). Then put sauted bell peppers, mushrooms, and onions. Add more cheese!! Top that with the broccoli. Add the egg mixture, but add garlic powder. Top with cheese. About the last 5 mins in oven add fresh tomatoes to the top!!

I used the shreded hash browns as I thought they would probably crisp up better as a crust and that part turned out all right. Am not a big thyme lover so substituted garlic salt. It is easy to prepare, but there are much better quiche type dishes out there. Don't waste your time on this one.

Rated 3 out of 5 by from This dish was ok. This dish was ok. There was not a lot of flavor for all the more bland ingredients like potatoes, mushrooms, and broccoli. The onion powder, pepper, and thyme just weren't enough. But the cheese and eggs came out good. I liked the "side salad" more than the hashbrown pie, but it was a quick, easy way to get some protein in the body.

Rated 5 out of 5 by from My husband & I loved this! My husband & I loved this! After pressing the hash browns to form a crust I put them in the oven for 10 minutes so they wouldn't be soggy. I used sauted fresh mushrooms, onions & carrots instead of broccoli and arranged fresh tomatoes over these vegatables. Also added garlic powder and salt to the eggs. My husband was impressed!

The only two things I changed was adding fresh broccoli instead of frozen broccoli and I put sliced frozen potatoes instead of frozen hash browns. My wife and I had this with breadfast burritos this weekend. There was none left. Need I say more?

I didnt have onion powder the first time I made it so I used garlic powder. It tasted great! When I made it the second time with the original ingredients-it was way too bland!?
