I used Cheddar instead of Velveeta cheese and I also added Tostito brand cheese dip. Also I added some taco seasoning to the chicken broth and used rotel instead of salsa.

I put it all in my rice cooker add I waited until the rice was almost done and then I added the cheese. But using the regular rice was very tasty.

Everyone liked it! since other comments mentioned the rice not cooking - I added the rice and let it boil for 1 min and then let it set. Came out perfect!

It is absolutely quick and easy and yet tastes like it took a lot more time and effort. It was a great side dish for our beef enchiladas and refried beans.
