Rated 4 out of 5 by from I used to make this quite often. I used to make this quite often. However I made some changes. I cook my rice with the salsa and broth. Brown either chicken or ground beef with taco seasoning pack. I then mix together the meat, rice and cheese (add cheese last, i prefer cheddar). I have even added drained black beans and corn. This makes it a meal instead of a side dish. Top with salsa and sour cream.

I couldn't believe how easy and simple this recipe was. I thought it turned out great, and even tasted better than the box kind. I had all the ingrediants here. From now on I'm going to use this recipe instead of buying it at the store.

I made it w/Minute rice and I made it with steamed rice and i preferred it w/the steamed rice as did my family. Just kind of measured out steamed rice until it was all coated and not "dry" looking. Really tasted better that way =-)

Wow, it takes a special recipe to have rice come out uncooked and gummy at the same time. This rice dish was awful, nobody in the family cared for it and I had to toss it out, you'd be better off buying a rice mix than to waste your money and ingredients on this disastrous dish!

I also added green chilies for a spicer flavor and a little more salsa to taste. I made this with the baked fiesta enchiladas for some friends and they were both big hits!

I really recommend using homemade salsa if you can - it really adds an extra kick. I also used shredded cheddar cheese once instead of velveeta... and it's also really good.

Rated 5 out of 5 by from This was great. This was great. Everyone loved it. I bought 'boil in the bag' rice by mistake and cooked the rice as directed on the package and added the cooked rice to the boiling salsa and chicken broth, then added the cheese. There wasn't a single bite left!
