  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cover. Cook 4 minutes on each side or until cooked through. Remove from skillet; cover to keep warm.
  • Add water, 1/2 cup of the barbecue sauce and corn to skillet. Bring to boil.
  • Stir in rice. Top with chicken; cover. Reduce heat to low; cook 5 minutes. Top chicken with remaining 1/4 cup barbecue sauce.

Note

Increase oil to 2 Tbsp. if using a regular skillet.

If you like your chicken dry, your rice runny, and for everything on your plate to taste the same, then by all means, make this dish. I found it awful, but my children liked it okay. But then what child doesn't enjoy drowning everything in barbecue sauce? I substituted white for brown parboiled rice for nutritional value. Otherwise everything stayed the same. I do not recommend this dish to anyone.
