  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cover. Cook 4 min. on each side or until lightly browned on both sides. Remove chicken from skillet.
  • Add soup and water to skillet; stir. Bring to boil.
  • Stir in rice. Top with chicken; cover. Cook on low heat 5 min. or until chicken is cooked through.

Note

Increase oil to 2 Tbsp. if using a regular skillet.

Substitute

For a whole grain alternative, substitute instant brown rice for the instant white rice and cook an additional 5 min.

Special Extra

Add 2 cups fresh or frozen broccoli florets with the rice.

Stir in 1/4 tsp. paprika with the soup.

Variation

For a creamier dish, use 1-1/2 cups uncooked rice.

Cheesy Chicken & Rice Skillet

Prepare as directed, stir in 1/2 cup VELVEETA Original Flavor Shredded Pasteruized Process Cheese food with the rice. Top with chicken; sprinkle additional 1/2 cup VELVEETA shredded before serving.
