  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cover. Cook 4 min. on each side or until cooked through. Remove chicken from skillet.
  • Add water, soup and nutmeg to skillet; stir. Bring to boil.
  • Stir in rice, spinach and cheese. Top with chicken; cover. Reduce heat to low; cook 5 min.

Note

Increase oil to 2 Tbsp. if using a regular skillet.

Substitute

Substitute 1-1/2 cups chopped fresh spinach or 1 can (13-1/2 oz.) chopped spinach, well drained, for the frozen spinach.

Substitute

Substitute KRAFT Shredded Cheddar Cheese for the Swiss cheese.

Tracy, what do I do if I want to use regular long grain rice (20 minute cooking time type) instead of Minute Rice? <<< From Mary, Kraft Kitchens Expert ~ We do not recommend preparing this recipe as a one-dish recipe with regular long grain rice. Instead prepare long grain rice separately. Omit MINUTE Rice and decrease water to 1 cup in original recipe to prepare chicken with a creamy spinach sauce. Serve over cooked rice. >>>

Rated 5 out of 5 by from This was absolutely delicious! This was absolutely delicious! I had to pre-prepare regular rice since I didn't have instant rice. I just mixed it in at the in place of the instant and it turned out perfectly. This for sure will be filed in my own personal recipe box.

My fault for not having instant rice around, thus I had to cook a little longer and nearly burnt the bottom. OOPS! Aside from my own mistake, it turned out great, and I'd expect it to be better next time.

I cut the chicken up and cooked in oil with pepper and garlic powder then i added frozen mushrooms and fresh spinach and followed the recipe except i made bow-tie pasta and added instead of rice
