  • Bring 1 cup milk to boil in medium saucepan. Stir in rice; cover. Remove from heat. Let stand 5 min.
  • Meanwhile, beat pudding mix and remaining milk in large bowl with whisk 2 min.
  • Stir rice mixture into prepared pudding. Cover surface of pudding with plastic wrap; cool 5 min. Stir. Serve warm or chilled.

Special Extra

Sprinkle with ground cinnamon or 1 cup BAKER'S ANGEL FLAKE Coconut before serving.

Add a Springtime Touch

Prepare as directed. Sprinkle pudding with 1-1/3 cups tinted BAKER'S ANGEL FLAKE Coconut, then top with pastel miniature jelly beans. To tint the coconut, mix 1/2 tsp. water with a few drops of food coloring. Add colored water to coconut in large resealable plastic bag. Close bag, then shake until coconut is evenly tinted.

Special Extra

Add 1/3 cup raisins to hot milk in saucepan along with the rice.

Last night I was finally successful, and it was DELICIOUS. I cooked ½ cup of regular long-grain white rice in 1 cup of water. Stuck it in the freezer to get very cold. Nuked the chopped apple until soft, and then stuck it in the fridge to get cold. After all was cold, I beat the pudding mix and spices into 1½ cups of very cold milk. Mixed the apple, raisins, nuts, and rice into the pudding mixture. Poured it all into an 8” x 8” baking dish. It set up nicely in the fridge. (Maybe my problem with the instant rice is our high elevation.) Try it this other way; it is better and worthy of 5 stars.

I'm trying to watch calories and fat, so I changed the recipe a bit and would recommend it: I made it with sugar free fat free vanilla pudding and brown instant rice. I boiled the rice in 1/2 c. water and 1/2 c. milk rather than 1 c. milk, hoping that it would make it a bit softer. I'm not sure it did, because it was still kind of hard. The taste was excellent, though. Next time I'm going to try doing regular brown rice. You can cook it in large quantities once and freeze them for later use -- then mixing up the pudding would still be very quick.

I made this today..it is good I added some nutmeg, cinnamon and vanilla and it made it taste good.,.the rice just doesn't get soft enough on the stove so I put it in a bowl and microwaved it for about 3 mins I would even do 4 mins to make it soft. The nutmeg and cinnamon made the pudding taste like egg nog..if you like egg nog you will like this..=) when you microwave the rice make sure you watch it cause it will bubble over the side of the bowl..or put it in a large bowl so if bubbles up it dont go over the side of the bowl

I've made this Rice Pudding several times, The first time It seemed to need a bit less rice I also felt something was missing...upon trying the second time I used 1/2 the amount of rice, Added a bit of Sugar,Also one tsp. of Pure Vanilla and WOW! What a fantastic taste. My Family loves Rice pudding, When I make this one, There is never any leftovers.I agree with the rest of my Famly. This is the ONLY Rice Pudding I now make.Give it a try, After all Its super quick n easy to make. ENJOY! 0:)

I guess I should have read the comments before making this one because my problem seems common. I boile the milk added minute rice and it wasn't cooked enough so I added 1/2 cup of water and brought the whole thing to a boil again. It was better but still not all the way cooked. Probably won't make this one again or will add even more water.

Rated 5 out of 5 by from Super easy and yummy! Super easy and yummy! Although it didnt taste like the slow cooked, homemade version my mom used to make, this took about 1/4 the time if not more! I altered the recipe a bit-used normal white rice, and used 2 cups milk to one cup rice. Then followed the recipe as written. Very yummy and easy. Perfect for a snack or dessert.

For a rice pudding that is truly delicious, in place if the instant pudding use the Jello vanilla pudding that has to be cooked. I think the ones who had a problem with the texture and taste of the instant pudding would love this. I add a little sugar and an egg to the pudding along with the milk. Try it! It's delicious.

I grew up on this recipe and could only find it on the back of Minute Rice boxes until I found your web site. It's the easiest, tastiest rice pudding I've ever had. There is no baking, hardly any cooking, and something even my husband could make, yet fancy enough (if you place in individual serving dishes) for company.
