  • Heat oil in large skillet on medium heat. Add chicken; cook 3 to 4 min. on each side or until done (165ºF). Meanwhile, combine tomatoes, mozzarella, 2 Tbsp. Parmesan and basil.
  • Add reserved tomato liquid to skillet. Top chicken with tomato mixture; simmer on low heat 5 min. or until mozzarella is melted and tomato mixture is heated through.
  • Transfer chicken to serving plate; top with crushed croutons and remaining Parmesan.

Serving Suggestion

Serve with your favorite hot cooked pasta.

    My family loved this recipe! :) This was the first new recipe I've tried since our son was born AND my husband got back from deployment, so it had been awhile since I had tried anything new. My husband wants me to add it into our meal rotation and said it tasted like something he might get in a restaurant! :) All I did differently was to add garlic when I made up the tomato mixture. I also served it over spaghetti like was suggested :)

    Chicken breast must be thin to cook in the time the recipe states.
