What You Need

1
Tbsp.  oil
4
 boneless skinless chicken breasts (about 1 lb.)
1
can  (10-1/2 oz.) chicken broth
2
cups  instant white rice, uncooked
2
cups  fresh broccoli florets
6
oz.  VELVEETA®, cut up

Make It

HEAT oil in large nonstick skillet on medium-high heat. Add chicken; cover. Cook 4 minutes on each side or until cooked through. Remove chicken from skillet. (Note: Increase oil to 2 Tbsp. if using regular skillet.)

ADD broth to skillet. Bring to boil.

STIR in rice, broccoli and VELVEETA. Top with chicken; cover. Cook on low heat 5 minutes. Stir until VELVEETA is melted.

Serving Suggestion
Serve with a mixed green salad for added color and texture, and get an extra serving of vegetables.
Substitute
Substitute 1 pkg. (16 oz.) frozen broccoli florets for fresh broccoli.
Keeping It Safe
The danger zone for holding food is between 40°F and 140°F. Once food is cooked to proper doneness and temperature, it can be kept hot at 140°F or above. Do not let food stand at room temperature longer than 2 hours. If the room temperature is above 90°F, do not let food stand longer than 1 hour. Make sure the refrigerator temperature is set at 40°F or lower. Reheat food to an internal temperature of 165°F to ensure food safety.
