I used mexican blend cheese (cheddar, monterey, asadero, and quesadilla queso) I also added a little extra jalepeno peppers and about a tablespoon of durkee's 6 pepper blend seasoning. It added a little more spice and peppery flavor (I love spicy), but not too much that other's couldn't enjoy. I will definitely make this again and will continue to experiment adding other spices

Rated 3 out of 5 by from I liked this recipe. I liked this recipe. I tried it on crackers but liked it better when I spead it out on a tortilla, rolled it up and cut into circles. GREAT appetizer. Next time I'm going to add cilantro and try it on a sun dried tomato tortilla.
