  • Heat dressing in large deep nonstick skillet on medium heat. Add chicken; sprinkle with oregano. Cook 5 min., stirring once.
  • Add vegetables and broth; simmer 5 min. Stir in rice; cover. Simmer 5 min. Turn off heat. Let stand, covered, 5 min. or until liquid is absorbed.
  • Grate 1 tsp. lemon peel; sprinkle over chicken. Cut lemon into 4 wedges; serve with chicken and rice mixture.

I used a bag of italian veggies (frozen) instead of fresh... well because I don't like chopping. :) But I liked it a lot... of course I LOVE that dressing. The first time I tried it I ate salad every day at lunch until I finished it off! Yummy. Kids not such big fans of it however...

Rated 5 out of 5 by from This is wonderful. This is wonderful. The flavors of lemon, oregano, and the dressing balance just right with the chicken. And it is nice to have a chicken thigh recipe once in a while. Even though chicken thighs have more fat content, they taste a little different and are much cheaper than chicken breasts.

This is the first time I cooked with chicken thighs, and I will not ever use chicken thighs again. Next time, I would make it with chicken breast. I used broccoli, cauliflower and tomatoes, and it was very tasty. I think it could have used a little less chicken broth.

My husband won't usually eat brown rice, but with it all mixed together he didn't even notice. He ate a good portion and commented on how good it was. Will definitely make this one again!

Rated 4 out of 5 by from I really liked this recipe, the flavour was great. I really liked this recipe, the flavour was great. I made on a hotplate in my dorm... the only thing was the rice, it was tasting a bit undercooked. but i've prolly gotten lazy from always using my steamer.

Rated 4 out of 5 by from This is an excellent recipe. This is an excellent recipe. I use chicken breasts instead of the thighs and use broccoli and carrots for the veggies. I also add a little parmesan cheese on top. My 2 1/2 year old loves it.
